The 3rd Spring


Ps: at the end of this post I will bombard you with Lily pictures


                    There's a pretty sweet way of saying someone's getting older in Spanish, Primavera, which means Spring. So this year Lily is having her tercera primavera (3rd Spring). My baby is getting wiser and I couldn't be happier. My mother always said the fireworks after her birthday we just for her. Obviously we know it's the fourth of July but we're so in love with her that we don't care.
                   So being that I've been in such a mood to make and bake everything in site.... here are some cupcakes I made for my precious (yes, you may say this is a smeagol voice).





    Ingredients:

Cake
  • 1 Cup of Whole Wheat flour
  • 1 Large Egg
  • 1/4 Cup Applesauce 
  • 1/4 Vegetable (Canola) Oil
  • 1 Tsp Cinnamon 
  • 1 tsp Baking Soda
  • 1/4 Cup Peanut butter 
  • 1/3 Cup Honey 

Frosting

  • 1/4 Cup Plain Yogurt 
  • 1/4 Cup Peanut Butter 




  1. Preheat oven to 350 degrees Fahrenheit (180 Celsius)
  2. Mix dry ingredients in large bowl
  3. Then add the rest of the ingredients and mix well
  4. Pour into a greased 8-9 inch round pan (or cupcake pan, which I did)
  5. Bake for 30 minutes (or 15-20 for cupcake pan)
  6.  Remove and let cool 
                                     Frosting ingredients:


  • Use a small bowl to mix they yogurt and peanut butter 
  • When the cake is cool you can then frost them
  • You can keep the remaining frosting in the fridge fro up to a week 







  • Easy pet friendly ingredients!



    My first batch got a little burnt but this one came out perfect.
